For the Culture: Watermelon Salad

Interested in trying out a new recipe that’s perfect for summer (and a twist on a cultural staple)? Give this refreshing watermelon salad a go! The combination of flavors will start a party in your mouth.

Here’s what you’ll need:Large bowl (1)

Small bowl (1)

Whisk

Knife

Small watermelon (1, chilled)

Limes (3-5, juiced)

Extra virgin olive oil (1/2 cup)

Salt (to taste)

Pepper (to taste)

Mint (1 cup, chopped)

Feta cheese crumbles (1.5 cups)

Directions:

1. Cut the watermelon into 1 inch chunks and set aside in large bowl.

2. In a small bowl, whisk together the lime juice, olive oil, salt, and pepper to make a dressing.

3. Pour dressing and mint over the watermelon and toss to coat.

4. Pour the feta cheese into the bowl and gently stir.

5. Serve.

I was able to purchase all of the ingredients for under $13 at a local grocery store. This recipe makes about 8 servings.

Enjoy!
